Rome Cavalieri’s La Pergola Embarks on A Transformation for Their 30th Anniversary

As part of the ongoing celebration of its 60th anniversary, Rome Cavalieri, A Waldorf Astoria Hotel, is set to undertake a significant renovation of its iconic restaurant, La Pergola. La Pergola, a renowned three-star Michelin-starred restaurant in Rome under the direction of Chef Heinz Beck, will undergo a complete makeover this spring to introduce a new gastronomic experience in conjunction with the restaurant's 30th anniversary.

The focal point of the renovation is the complete redesign of the dining room by the esteemed design studio Jouin Manku, helmed by the talented duo Patrick Jouin and Sanjit Manku. Drawing inspiration from Rome's timeless style, the hotel's architectural design, and the panoramic views from La Pergola's rooftop and terrace, Jouin Manku envisions a new setting that incorporates elements such as arches, columns, carved ornaments, terracotta shades, and ancient marble.

Chef Heinz Beck, celebrated for his innovative dishes inspired by Italian and Mediterranean flavors, will have a new stage to showcase his culinary creations in the redesigned restaurant. Each dish is a harmonious presentation of unexpected flavors, reflecting meticulous analysis and a visual appeal that has become synonymous with Chef Beck's culinary artistry.
