Chef Massimo Bottura has launched Torno Subito, his first solo project in the United States, located on the rooftop of Julia & Henry’s food hall in downtown Miami. This casual-yet-refined Italian restaurant is a sibling to its Michelin-starred counterpart in Dubai and blends the retro charm of Italy’s Riviera with the vibrant culture of South Florida. Chef Bernardo Paladini, a key figure behind Torno Subito Dubai, now leads the Miami outpost, bringing a deep understanding of local ingredients and culinary traditions. The restaurant’s design echoes a beach club ambiance with vivid colors, a buzzing open kitchen, and dazzling views of the city, creating an inviting yet sophisticated atmosphere.
The menu at Torno Subito features innovative Italian cuisine that pays homage to Bottura’s philosophy of "tradition in evolution." Signature dishes include handmade tortellini in Parmigiano Reggiano sauce, cacio e pepe with citrus zest inspired by Florida’s produce, and creative Miami-exclusive offerings like seabass porketta and the whimsical dessert "Oops, I Burned the Key Lime Pie." The restaurant also collaborates with Dante, a celebrated bar, to provide a unique cocktail experience that merges Italian aperitivo traditions with Miami’s vibrant drinking culture, offering an extensive selection of negronis, spritzes, and inventive aperitivo-inspired drinks.
