On July 9, 2024, the culinary scene in Monaco was revolutionized by the formal inauguration of L'Abysse at Hôtel Hermitage Monte-Carlo, a joint venture between the esteemed chefs Yannick Alléno and Yasunari Okazaki. Building on the success of Alléno’s Pavyllon Monte-Carlo, L’Abysse brings a fresh perspective to sushi, blending innovative French techniques with traditional Japanese artistry. Designed by Laurence Bonnel-Alléno and RoWin’atelier architects, the restaurant features a contemporary Japanese aesthetic infused with Monaco’s coastal charm, creating an intimate dining environment focused on culinary excellence.
L’Abysse showcases Okazaki’s meticulous approach to sushi-making, with dishes like ala carte nigiri and Omakase offerings highlighting his precision and expertise.
