Chef Tovar, a Mexican native with extensive experience in Spain, has crafted a menu featuring fresh fish and meat grilled over an open flame, paired with traditional Mediterranean spreads and sides, all personalized with his distinctive touch. The restaurant’s name, inspired by the Greek word "eunoia," meaning "good idea," embodies Tovar's vision of creating dishes that encourage sharing and connection.
NŌIA’s culinary offerings are complemented by a globally inspired wine and cocktail program, rooted in Mexican traditions. Mixologist Amer Heneidi has designed an eclectic cocktail menu featuring local ingredients such as nopales and hoja santa, while wines are sourced exclusively from Mexico’s top wineries, with a focus on the Guanajuato region.
