The Bahamas Series: Costa, Open-Air Mexican Dining in a Lush Bahamian Setting

Lodge & Dine announces a 4-star rating for Costa after a day’s visit evaluating the guest experience. The restaurant demonstrated particular strength in its open-air cabana setting surrounded by koi ponds, relaxed and family-friendly atmosphere, and attentive service.

Costa brings coastal Mexican flavors into an open-air resort setting at Baha Mar, where meals unfold among koi ponds and views of Rosewood’s gardens and pools. The space immediately draws guests in, offering a sense of escape that feels lively without becoming overwhelming.

Design plays a central role in the experience. The circular layout creates an easy flow between tables, while warm wood finishes, lush greenery, and water features soften the architecture. As evening settles in, ambient lighting reflects off the ponds, casting a gentle glow that gives the space a calm, resort-driven elegance. The atmosphere feels social and welcoming, particularly well suited to families and mixed-age groups seeking a relaxed yet visually engaging dining environment.

The menu leans toward recognizable Mexican staples, presented with restraint. Starters such as the trio of ceviche—Mexican shrimp cocktail, snapper aguachile, and scorched conch salad—offer freshness and acidity, though the flavors remain cautious rather than bold. Tuna tartare, paired with aguachile, avocado, and charcoal powder, is clean and pleasant but understated. Among the mains, the crispy pork belly provides contrast through its caramelized exterior and tender interior, lifted by charred tomato and serrano sauce and balanced with pineapple salsa. Chicken tacos with tinga, sour cream, and panela cheese are comforting and familiar, while the short rib birria quesadillas deliver richness through slow-cooked meat and melted Oaxaca cheese.

The chicken fajitas arrive with well-seasoned chicken that is tender but mild, accompanied by peppers and onions that add sweetness more than heat. The flavors are clean and approachable, designed to please a wide audience rather than challenge the palate. It is satisfying in a practical sense—easy to share, easy to enjoy—but lacks the layered seasoning or depth that would leave a lasting impression.

The bar program adds dimension to the meal, offering tequilas, mezcals, Mexican cocktails, wines by the glass, and thoughtfully prepared mocktails. The Medicina Alternativa, blending silver tequila, cucumber infusion, lemon juice, agave syrup, St. Germain, and soda water, is crisp and refreshing, pairing well with the menu’s lighter flavors. For a non-alcoholic option, the Bahamian Sunrise combines pineapple, strawberry, lime, and soda for a bright, tropical finish.

Service remains a consistent strength. Staff are attentive, warm, and efficient, guiding the experience smoothly without intrusion.

Costa is best suited for relaxed family dinners, casual celebrations, or resort evenings where setting and ease take priority. The 4-star rating reflects a destination that delivers a pleasant, well-rounded experience—one defined more by atmosphere and hospitality than by culinary ambition.
